Deliciously creamy sauce that is dairy free? Yes please!

Although we've made avocado pasta before, we've never made the sauce in a blender before. Comment if you want us to share our usual recipe!

We highly rate adding bacon and sundried tomato to this pasta sauce!

Ingredients

  • 1 avocado
  • 100g spinach
  • 2 cloves of garlic
  • 3 rashers of bacon (optional)
  • 4 sundried tomato halves (optional)
  • Pasta (we chose fusilli because it catches teh sauce well)

Method

  1. Boil some water for your pasta
  2. Chop your bacon and sundried tomatoes and start frying the bacon
  3. Add the avocado, spinach and garlic cloves to a blender
  4. After you have started boiling the pasta, add some of the starchy water to the blender
  5. Blend the sauce. Keep adding water until you reach the desired consistency. We added around 1/2 cup of starchy pasta water
  6. Drain your pasta, and add the sundried tomatoes, sauce and pasta to the bacon. You'll notice that the sauce will turn a darker green colour once it touches the heat, due to the spinach in the sauce. Make sure you keep stirring!
  7. Time to plate up and devour your masterpiece
