Ingredients

  • 2-3 bananas (mashed)
  • 1/2 greek yoghurt
  • 1 egg
  • 3 tbsp olive oil
  • 1 tsp vanilla extract
  • 1 tsp cinnamon powder
  • 1 tsp baking soda
  • 1/3 cup brown sugar
  • 1 cup quick oats
  • 1 cup plain flour

Method

  1. Preheat the oven to 180 degrees celsius.
  2. Combine the mashed bananas, egg, yoghurt, oil, vanilla extract and cinnamon in a bowl.
  3. Add the baking soda, flour, oats and sugar and gently fold around 5-6 times.
  4. Add in blueberries and fold a couple more times.
  5. Scoop the batter into a muffin tray and bake for around 20 minutes.
