Adding brown rice to your meatballs is such a simple step that goes a such long way.

The rice inside gives it a nice bite-y texture, while the rice on the outside, and the grains that fall out, gets nice and crispy. I would strongly recommend using brown rice, over white rice, because it has a nutty flavour that goes really well with the sauce. This meal can easily be made in bulk and I reckon it tasted even better the next day. There are endless options of what you can serve these meatballs with, but our favourite is some broccolini and brown rice.

Meatball ingredients

  • 1kg beef mince
  • 3/4 cup bread crumbs (we used 2 slices of bread)
  • 300g cooked brown rice (we cooked 1/2 cup of brown rice)
  • 2 eggs
  • 1 brown onion
  • Salt and pepper, to taste

Sauce ingredients

  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 4 cloves of garlic
  • 1 tbsp flour
  • 4 tbsp water

Method

  1. Dice the onion and mince the garlic
  2. In a large mixing bowl, combine the beef mince, bread crumbs, brown rice, eggs, garlic, onion, salt and pepper
  3. Roll into meatballs
  4. Pan-fry meatballs for around 15 minutes, or until they are cooked through
  5. In a small pot, cook garlic until it is golden brown
  6. Then, add the soy sauce and honey. Combine flour and water to make a slurry, and gradually add to the sauce to thicken it. Let it simmer for a few minutes before taking it off the heat
  7. Pour the sauce over the meatballs and toss well
