Kimchi Fried Rice

It's a delicious recipe that uses ingredients you probably already have at home.
While it's a super customisable recipe, we chose to stick to the typical ingredients found in a kimchi fried rice.
If you're a big kimchi fan, add in some extra brine for a stronger flavour.
Ingredients
- 170g spam
- 2 heaped tbsp kimchi (roughly chopped or to taste)
- 1 tbsp gochujang
- 2 eggs
- 1 brown onion
- 1 tbsp sesame oil
- Spring onions
- Cooked rice
- Sesame seeds (to garnish)
Method
- Dice spam and brown onion, and thinly slice spring onion
- Fry the spam until nicely browned before adding in the brown onion and some of the spring onions
- Once onions are translucent, make a well and crack the eggs into the middle and stir
- After the eggs are halfway cooked, add gochujang paste, kimchi and rice
- Fry for a few minutes until fragrant and add remaining spring onions
