We LOVE okonomiyaki and wanted to try making it at home.

Only problem is that it traditionally calls for a lot of ingredients that we find hard to source here in Australia, so we have done a lot of experimentation to find good substitutes.

Is it traditional? Errrr maybe not

Is it delicious? Absolutely!

Serves 2 people

Ingredients

  • 4 eggs
  • 1 cup all purpose flour
  • 1/2 cabbage (thinly sliced)
  • 1 pinch of baking powder
  • 3/4 cup dashi (we usually mix 1 tbsp of dashi powder with 3/4 cup water)
  • 4 slices of pork (or another topping of your choice)
  • 1 tsp hoisin sauce
  • 1 tbsp smokey BBQ sauce
  • 2 tsp soy sauce
  • Ginger powder
  • Salt
  • Mayo
  • Furikake (optional, bonus points if it has seaweed and bonito flakes)

Method

  1. Mix the flour with the baking powder and salt
  2. Add dashi and eggs to the flour mixture and whisk well
  3. Pan fry the pork slices
  4. Cut up the pork slices and add to the batter, along with the cabbage and mix well. The batter should nicely coat the cabbage and pork without having too much leftover at the bottom
  5. Add the batter to a pan. Tip: it is easier to flip if it's smaller
  6. Mix the hoisin sauce, BBQ sauce, soy sauce and ginger to create the okonomiyaki sauce substitute
  7. Once the okonomiyaki is done, spread your homemade okonomiyaki sauce and drizzle some mayo. Add furikake if you have some, it'll really elevate this flavour-bomb!
