Sundried Tomato Pesto Toastie

If you thought the pesto couldn't get any better, wait until you make a toastie with it - absolute game changer.
This toastie is brilliant on its own but if you want to step it up even further, we highly recommend some mushroom or chicken.
Ingredients
- 2 slices of bread
- 3 tbsp sundried tomato pesto
- 2 tbsp grated cheese
- Olive oil
Method
- Spread the sundried tomato pesto liberally on one side of each of the slices of bread. Put the cheese on one of the slices of bread and close the sandwich
- Oil your pan, so that the toast gets nice and crispy. Once it is hot, toast that toastie to perfection and enjoy immediately
