I recently went to Finland and this was hands-down one of my favourite dishes there.

Right now, it’s absolutely freezing in Finland so coming inside and eating a hearty, warm soup is perfect. I knew instantly that when I got home, I would need to learn how to make this.

A challenge we had was that fish stock was hard to find at the shops. Yes, we definitely could have made some homemade fish stock but we just didn’t feel like it, so we thought we would try substituting it with vegetable stock. It definitely doesn’t have such a strong salmon taste, however, it is still pretty delicious if you can’t easily access or make your own fish stock.

Serves 4

Prep time: 10 minutes

Cooking time: 20 minutes

Ingredients

  • 400g salmon
  • 500g potatoes
  • 2 carrots
  • 1 leek
  • 5 cups vegetable stock
  • 1 cup thickened cream
  • 30g butter
  • 5g fresh dill

Method

  1. Peel and roughly dice carrots and potatoes
  2. Cut leek into this slices
  3. Chop salmon into 1-inch cubes
  4. In a large pot, melt the butter
  5. Once melted, add leek and fry until they are a vibrant green
  6. Add in carrots and potatoes and cook for around 2 minutes
  7. Add the vegetable stock and cover with a lid. Let it simmer for around 10 minutes
  8. Remove the lid and add the salmon and cream. Put the lid back on and simmer for another 3-4 minutes
  9. Turn off the heat and add the dill
