Stir Fried Noodles

You’ll very rarely catch me eating stir fried noodles when I eat out.
It only takes 20 minutes to make and I find it kinda hard to justify spending $15-20 on it, when I know I can easily do it at home. Just chop up your choice of protein and vegetables, make a tasty sauce and toss it together in a wok. Do you have a dish that is so easy to make that you refuse to order it from a restaurant?

Ingredients
- 500g yellow alkaline noodles
- 2-3 cups Chinese cabbage (napa cabbage)
- 1 carrot
- 2 chicken thighs
- 2 cloves garlic
- 1 spring onion
- 4 tbsp soy sauce
- 2 tbsp mirin
- 1 tsp honey
- Garlic powder
- Onion powder
Method
- Cut carrot into small matchsticks and thinly slice chinese cabbage. Make sure to separate the stems from the leaves
- Mince garlic cloves and thinly slice spring onions
- Slice chicken into small, bite-sized strips
- Mix soy sauce, mirin, honey, garlic powder and ginger powder
- Marinate chicken in half of the marinade. Make sure to preserve the other half for later
- Prepare noodles as per packet directions
- Fry garlic and spring onions in the wok
- Once fragrant, add chicken
- After the chicken has browned, add in the chinese cabbage stems and carrot
- Once the vegetables are almost cooked through, add the noodles, chinese cabbage leaves and the remainder of the marinade
