This quintessentially Australian dish somehow always finds its way to a lot of potlucks and picnics and there's a really good reason why.

It stores really well, is delicious cold or hot, and comes together pretty easily. Just make sure that you don't forget to add in all your ingredients while they are still in the bowl so you don't need to awkwardly fold it in while it's already in the tray.

Ingredients

  • 400g zucchini (about 1-2)
  • 4 slices of bacon
  • 1 brown onion
  • 1 cup grated cheese
  • 1 cup all purpose flour
  • 1 tsp baking powder
  • 5 eggs

Method

  1. Preheat oven to 170 degrees celsius
  2. Finely grate zucchini and squeeze as much water out of it as you can
  3. Finely dice the onion and bacon
  4. Beat the eggs in a large bowl
  5. Add zucchini, bacon, onion, cheese, flour and baking powder and mix well
  6. Pour the mixture into a tray and bake for 30-35 minutes, or until it is golden brown on top
